Gluten represents some type of storage protein of cereal family therefore it is an ingredient of grains. Glutenin and gliadin, the two proteins, constitute gluten and are bound by it. Rye, barley, spelt and wheat generally contain gluten. Low protein foods contain it in full and we can get it from there. It is also used as the food additive that is able to provide the texture and elasticity to the food according to your desire. It happens so, however, that not everyone can consume gluten without problems. There are people who can not digest it and tolerate and they are supposed to have gluten intolerance.
Gluten allergy is not the same as food allergy and they have different consequences as well. Gluten allergy is fraught with gastro intestinal distress that harms the small intestine. Another name for the condition is celiac disease and it can not be treated, unfortunately. Gluten allergy is divided into several following conditions named accordingly silent celiac disease, refractory celiac disease, latent celiac disease and collagenous celiac disease.
The condition of gluten intolerance has got the following symptoms:
- any wheat products, barley, rye and oats can not be digested by a person and, if they are consumed, vomiting, abdominal bloating, constipation, nausea, diarrhea, indigestion, flatulence, abdominal pain and dyspepsia are possible;
- other probable complications are headache, mouth ulcers, muscle cramps or a tingling sensation in the legs, depression and irritability;

Remember that these are grains responsible for causing allergy. Try fruits, vegetables, fish and nuts in your diet more. You can only relieve your allergy be sticking to a gluten free diet. It is not really hard, though, will require some getting used to and effort but it is the only way to fight the condition.
